Vegetable Salad

I'm really getting into salads this year.  I try to make one or two on Sunday so I can take them during the week for lunch.  This helps me a ton because I don't have to worry too much about what I will be having for lunch because we typically have meat leftovers.  This salad is so versatile!  I've had several different combinations of vegetables, but I only took a picture of the most recent one which looked gorgeous!

One year ago:  Grilled Asparagus

Vegetable Salad

Makes 4 servings

2 cups sliced vegetables like peppers, carrots, or broccoli (I used carrots and red peppers)
1 small red onion, sliced
2 tablespoons cilantro, chopped
1/4 cup rice wine vinegar (any other will work too!)
2 tablespoons lime juice
1 tablespoon honey
1 teaspoon soy sauce
1/8 teaspoon sesame oil
1 tablespoon ginger, minced
2 cloves garlic, minced
  1. Place vegetables and cilantro in a container.
  2. Mix remaining ingredients in a microwave-safe container.  
  3. Heat in microwave until honey is melted, about 30 seconds.
  4. Pour dressing over vegetables.
  5. Stir to combine.
  6. Allow to sit overnight before serving, stirring every few hours.

Balsamic and Rosemary Grilled Steak

During this time of year, I am more than willing to let my hubby do all the cooking (aka grilling) because it takes a load off of me!  All besides finding different marinades and such!  He wasn't a big fan of rosemary or balsamic when we first moved in together, but now he has changed his story!  He actually said this was pretty good!  (I thought it delicious!)

One year ago:  Garlic and Brown Sugar Chicken

Balsamic and Rosemary Grilled Steak

Makes 4 servings

1 1/2 pounds steak
6 cloves garlic, minced
1/4 cup olive oil
1/4 balsamic vinegar
1/4 cup red wine
1 tablespoon rosemary, chopped
1/2 teaspoon ground black pepper
  1. Place steak in a container suitable for marinating.
  2. Mix remaining ingredients until combined.
  3. Pour marinade over steak.
  4. Allow to marinate overnight.
  5. Preheat grill.
  6. Cook steak until desired doneness is reached; discard marinade.
  7. Serve.
How do you keep it interesting on the grill?  I'd love to hear, because I'm running out of ideas!  Although, I don't need much of an excuse to troll Pinterest for ideas!

Broccoli and Cauliflower Salad

Some of the best recipes happen by accident.  Take this salad for instance.  I was at my grandparents' during a meal time, but I wasn't too hungry so I grabbed some broccoli, cauliflower and blue cheese dressing.  The rest as they say, is history!

One year ago:  Split Pea Soup

Broccoli and Cauliflower Salad

Makes 8 servings

1 head cauliflower, chopped into small florets
2 crowns broccoli, chopped into small florets
1 1/2 cup blue cheese dressing
1/2 cup sour cream
5 oz bacon bits
1 medium red onion, chopped
  1. Mix all ingredients together.
  2. Season with salt and pepper.
  3. Allow to sit overnight for best flavor, but it can be served immediately.

Chili Spiked Rice

Plain rice is so boring!  I'm trying to branch out and make different flavors.  Some have been misses, but this chili spiked rice was delicious!

Chili Spiked Rice

Makes 4 servings

1 tablespoon olive oil
1/2 teaspoon ground cumin
1 tablespoon chili flakes (less if you don't like it too spicy!)
1/4 teaspoon ground coriander
3 cloves garlic, minced
2 cups brown rice, cooked
  1. Heat oil in a pan.
  2. Add spices and cook for 2-3 minutes or until fragrant.
  3. Add rice and heat through.
  4. Season with salt and pepper.
  5. Serve.
I made this with the Springtime Fish, and my hubby ate everything up!  (For him, eating rice is not his favorite!)  How do you have rice?
