Indian Chicken Stew

This last week has been a bit stressful both at work (where I have put in my two week's notice!) and personally (my brother got married this past weekend!) so I only have one picture for this recipe, but it's a good one!

Indian Chicken Stew

Serves 8

Prep time: 10 minutes
Cook time: 6-8 hours
Assembly: 5 minutes

2 pounds chicken thighs, boneless and skinless
1 medium onion, diced
4 cloves garlic, minced
5 teaspoons curry powder
2 teaspoons fresh ginger, minced
1/2 teaspoon ground black pepper
2-15 oz cans chickpeas (garbanzo beans), drained and rinsed
2-15 oz cans diced tomatoes (fired roasted is preferred)
1 bay leaf
9 oz frozen spinach, thawed
2 cups cooked rice
  1. Place chicken thighs in the bottom of a crock-pot.
  2. In a large bowl, mix onion, garlic, curry, ginger, pepper, beans, and diced tomatoes until combined.
  3. Pour bean mixture over chicken in the crock-pot.
  4. Add bay leaf.
  5. Cook on low for 6-7 hours.
  6. In the last hour of cooking, add rice and spinach.
  7. Serve.
I was obsessed with this recipe!  I claimed all the leftovers, and I ate it happily for several days.  In fact, it got better the longer it sat!  (That could have been my delusional mind...)  Either way, this is definitely a new favorite especially since it was so easy!

Tuesday Tip: Curry Powder

Some of the best recipes come in dire need.  For instance, this curry powder recipe is a perfect example.  I was making Indian Chicken Stew and realized that I short a very large amount of curry the recipe called for.  Not one to panic, I googled how to make curry powder and adapted it to what I had.  I used the curry powder several other times before declaring it delicious and my only curry powder from now on.  Sometimes out of dire circumstances comes beauty and new recipes!

Curry Powder

Makes 2 oz

4 1/2 teaspoons ground coriander
2 teaspoons turmeric
1 1/2 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground cloves
  1. Mix together until well combined.
  2. Store in an airtight container.

Cinco de Mayo!

I've noticed that this year, holidays are sneaking up on me....  I'm usually ahead of the game!  This year, Cinco de Mayo did sneak up on me, but I have made several Mexican recipes over the last few years.  A recap of my absolute favorites will be all I can offer for now!  (I'm already planning on my July 4th recipes!)

Food for Thought

Today starts a weekend of wedding fun since my brother will be getting married on Monday.  Tonight is the Polterabend!  In German tradition, guests come to the bride's house and smash ceramics, porcelain, and stone items like dishes to "break" everything bad that can happen to a marriage and to scare off the evil spirits.  Then the guests eat and drink while bride and groom clean up the mess, together. 

My hubby and I had one before our wedding, and it was a blast!  I thought I shared it on here, but I didn't.  I received a gift of a picture frame with some shards glued on the glass as an anniversary gift, and I adore it!  Whenever I am mad or upset with my hubby, I glance at it.  Then I remember that we are a team and need to work together.  Mushy-sentimental stuff, I know, but hey, I am allowed every now and then!
