Chicken Romanoff

Serves 4
1 package chicken thighs, boneless and skinless
1/2 large onion, chopped
1/8 teaspoon cayenne pepper
12 oz cottage cheese
12 oz sour cream
1/2 cup Parmesan cheese, grated
2 tablespoons all-purpose flour
1 cup frozen peas
Pasta, cooked
Chives or green onions (optional for garnish)
- Place chicken in the bottom of a crock-pot.
- Mix onion, pepper, cottage cheese, sour cream, cheese, and flour together in a bowl.
- Pour cheese mixture over chicken thighs.
- Cook on low for 6-8 hours or until chicken is done.
- Add peas and cook until heated through, about 45 minutes.
- Serve over pasta with chives as garnish.
