Creamed Corn

I've only ever made corn either steamed on the stove top, boiled on the stove top, in a pudding, or grilled.  The hubby and I got into a discussion of his love of corn, and he said that he really, really loved cream corn.  So I decided to see what I could do, and being the lazy person I am, I found a recipe for the crock-pot!

He said it was"okay", but he ate at least 3 generous helpings that night!  I managed to freeze a quart bag for a rainy day.  I think that he thought it was more than "okay".

Creamed Corn

Makes 8 servings

3 pounds corn, fresh or frozen
1/2 cup milk
1 tablespoon sugar
1/4 teaspoon ground black pepper
8 oz cream cheese, cubed
1 stick unsalted butter, cut into thin slices
  1. Place corn in the crock-pot.
  2. Heat milk, sugar and pepper together and stir until sugar is dissolved.
  3. Pour milk mixture over corn.
  4. Top corn with cream cheese and butter.
  5. Cook on low for 6-8 hours.
  6. Stir and add salt to taste.
  7. Serve.

Cajun Garlic Bread

Naturally, when you make Cajun seasoning you have to use it.  I've discovered a local Cajun restaurant (coming soon!) that has awesome food and excellent garlic bread.  They call if Cajun Garlic Bread, and it is so delicious that I asked how to make it.  It's so easy!  Just Cajun seasoning, garlic powder, butter and bread!!!

Cajun Garlic Bread

Makes 4 servings

1 teaspoon Cajun Seasoning
2 tablespoon unsalted butter
1/4 teaspoon garlic powder
4 slices bread, your choice
  1. Mix Cajun seasoning, butter and garlic powder in a small bowl.
  2. Microwave until butter is melted.
  3. Spread Cajun garlic butter on bread.
  4. Toast bread until desired crispness is reached.
  5. Serve.
Let's be honest--anything with "garlic" is awesome to me!  The hubby loves this garlic bread because of the spice!  What's your favorite type of garlic bread?

Tuesday Tip: Cajun Seasoning

Since I'm just loving the idea of making your own spice mixes, I decided to make my own Cajun Seasoning mainly because my local health food store stopped carrying it in bulk, and anything from the store has who-knows-what in it.  It took me a few tries, but here it is!

This is a bit spicy for me, but the hubby loves it!  He is OBSESSED with Cajun Garlic Bread, and this spice mix is the star of that recipe.

Cajun Seasoning

Makes 2 oz

2 teaspoons Kosher salt
2 teaspoons garlic powder
2 teaspoons paprika (1 teaspoon if you don't like it too spicy)
1 teaspoon ground black pepper
1 teaspoon onion powder
1 teaspoon cayenne pepper (1/2 teaspoon if you don't like it too spicy)
1 1/4 teaspoons dried oregano
1 1/4 teaspoons dried thyme
  1. Mix all ingredients together.
  2. Store in an airtight container.

Parsley Leaf Potatoes

The hubby loves potatoes, any way a person can make them.  I found this easy and simple recipe from smitten kitchen, and best of all, it's delicious! My favorite part is the crispy potato bottom!

Parsley Leaf Potatoes

Serves 4

6 tablespoons butter
8-10 small potatoes, your favorite and halved
16-20 parsley leaves
1-2 teaspoons Kosher salt
  1. Preheat oven to 450.
  2. Place butter in a roasting pan or glass casserole baking dish and place in oven to melt butter.
  3. Meanwhile, place one parsley leaf on each potato half.
  4. Sprinkle potatoes with salt, generously.  I promise, it's really hard to over-salt potatoes.
  5. Once butter is melted, pull the pan out of the oven.
  6. Quickly place potatoes face-down in melted butter and try not to move them around too much!
  7. Roast potatoes for 35-45 minutes or until tender.  If potatoes begin to get very dark on the parsley side, turn them over and finish roasting.
  8. Serve immediately with cut sides up and sprinkle with pepper.
