Balsamic Beef

Makes 4 servings
2 pound beef chuck roast
1/2 cup beef broth
1/2 cup light brown sugar
1/4 cup balsamic vinegar
1 tablespoon soy sauce
1/4 tsp crushed red pepper flakes
3 cloves garlic, minced
2 tablespoons cornstarch (3 tablespoons tapioca flour for paleo)
2 tablespoons broth
- Place roast in crock-pot.
- Mix remaining ingredients together and pour over roast.
- Cook on low for 6-8 hours.
- Drain cooking liquid from crock-pot and place in a saucepan.
- Mix cornstarch (tapioca) and broth together and add it to the beef liquid.
- Cook sauce until thickened.
- Slice beef and serve over mashed potatoes (or cauliflower) topped with gravy.
