Roasted Carrots with Garlic
Serves 4
Ingredients
1 pound medium carrots, peeled and halved lengthwise
4-5 cloves garlic
1 tablespoon olive oil
1 tablespoon olive oil
1 tablespoon lemon juice
- Preheat oven to 425.
- Arrange carrots and garlic on baking sheet; drizzle carrots with oil, salt, and pepper.
- Roast 30-35 minutes or until carrots are tender.
- Drizzle lemon juice on carrots before serving; spread garlic onto the carrots
Roasting can be done to any vegetable or fruit and tends to bring out a sweetness that usually isn't tasted (vegetables) or intensifies and deepens the sweetness (fruit). Do you regularly roast a particular fruit or vegetable?
