40 Clove Garlic Chicken

Serves 4
2 teaspoons olive oil
2-3 pounds chicken thighs, skinless
40 cloves whole garlic cloves
1/4 cup dry white wine
1/2 cup chicken broth
1/8 teaspoon ground black pepper
1 teaspoon dried thyme
2 tablespoons butter
2 tablespoons flour
- Heat oil in skillet until hot.
- Sprinkle chicken thighs with salt and pepper.; add chicken to hot pan.
- Sear chicken until nice and golden brown; remove chicken from pan and place in a crock-pot.
- Add garlic to hot skillet and saute until garlic begins to brown.
- De-glaze pan with white wine; add broth, pepper and thyme. Boil for about 5 minutes.
- Add sauce to crock-pot.
- Cook on low for 6-8 hours or until chicken is done.
- Make a roux with butter and flour to thicken the garlic sauce.
- Serve.
