{Chipotle Pork Roast}

Chipotle Pork Roast

Serves 4
1/2 teaspoon ground pepper
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon garlic powder
2 teaspoons ground cumin
2-3 pound pork roast
3 small sweet potatoes, diced
6 small potatoes, diced
1 onion, cut into large chunks
2-8 oz can tomato sauce
1 can diced tomatoes
2 canned chipotles in adobe sauce, minced (wear gloves!)
2 tablespoons beef broth
2 tablespoons cornstarch
- Spray a crock-pot with non-stick spray.
- Mix spices together in a small bowl until well combined.
- Rub spice mixture on all sides of the pork roast; set aside.
- Mix both potatoes, onions, and tomato products in a large bowl.
- Add spice mix to potato mix and stir until well combined.
- Place potato mixture in the crock-pot.
- Place pork roast on top of potatoes.
- Spread chipotle peppers on pork roast.
- Cook on low for 6-8 hours or until potatoes are done.
- Mix broth and cornstarch together until dissolved.
- Add cornstarch to liquid in crock-pot to finish the sauce.
- Serve.
