Cauliflower Rice
Makes 8 servings
12 oz cauliflower florets
3 tablespoons butter
6-8 cloves garlic, minced
1 cup brown rice, soaked for 8 hours
2 cups vegetable or chicken broth
1 cup water
1 bay leaf
1 cup Mozzarella cheese
3 tablespoons cream cheese
- Heat butter in a saucepan and add garlic; saute for 2-3 minutes.
- Add rice and stir to coat in butter; saute for 2-3 minutes.
- Add broth, water and bay leaf.
- Simmer rice until it is al dente.
- Meanwhile, in a food processor, puree cauliflower (if cauliflower is raw, steam until tender).
- Once rice is done cooking, turn off the heat and add cauliflower, mozzarella and cream cheese.
- Stir to combine cauliflower and melt cheeses.
- Add salt and pepper to taste.
- Serve.
