Curried Sweet Potato and Lentil Stew

I am all about expanding horizons especially with food.  So when I came across this recipe for sweet potato and lentil stew from Whole Living magazine (it's one of my favorites!), I knew I could spruce it up a bit to bring it to another level.  Ben is not a fan of the spices cooking because of their pungency, but he loved this stew!

Curried Sweet Potato and Lentil Stew

Makes 4 servings

Ingredients

2 tablespoons olive oil
1 medium onion, diced
6 cloves garlic, minced
1 tablespooon fresh ginger, peeled and minced
1 pound pork, diced
2 tablespoons curry powder
1 can diced tomatoes
1 cup lentils, rinsed
1 quart chicken broth
1 can light coconut milk
1 pound sweet potatoes, peeled and diced
1/2 cup fresh cilantro (2 tablespoons dried cilantro)
  1. Heat oil in skillet; add onions, ginger, and garlic cooking until tender.
  2. Add curry and cook until fragrant; add pork and cook until done.
  3. Add remaining ingredients except cilantro (unless using dried) and stir to combine.
  4. Simmer stew until lentils and sweet potatoes are tender, about 1 hour.
  5. Add fresh cilantro in the last 5 minutes of cooking.
