Curried Sweet Potato and Lentil Stew
Makes 4 servings
Ingredients
2 tablespoons olive oil
1 medium onion, diced
6 cloves garlic, minced
1 tablespooon fresh ginger, peeled and minced
1 pound pork, diced
2 tablespoons curry powder
1 can diced tomatoes
1 cup lentils, rinsed
1 quart chicken broth
1 can light coconut milk
1 pound sweet potatoes, peeled and diced
1/2 cup fresh cilantro (2 tablespoons dried cilantro)
- Heat oil in skillet; add onions, ginger, and garlic cooking until tender.
- Add curry and cook until fragrant; add pork and cook until done.
- Add remaining ingredients except cilantro (unless using dried) and stir to combine.
- Simmer stew until lentils and sweet potatoes are tender, about 1 hour.
- Add fresh cilantro in the last 5 minutes of cooking.
