Split Pea Soup

This soup was a staple in my childhood (along with lentil soup).  Easy to make and easy on the wallet, this soup is good one to have in your recipe box.  Although this has meat in it, this is excellent as a vegetarian meal too.  Serve with a grilled cheese sandwich, and it makes the perfect comfort meal.

{Just put everything in a crockpot and let it go!}

{This is before I stirred it; the soup is thickened by the peas that dissolve}

Split Pea Soup

Makes 8 servings

1 pound split green peas, rinsed and discolored peas picked out
1 onion, diced
4 cloves garlic, minced
1 bay leaf
1/2 teaspoon ground black pepper
2 quarts broth (chicken or vegetable)
1/2 cup carrots, chopped
1/2 cup celery, chopped
1 tablespoon dried parsley
8 oz country ham (optional)
  1. Combine all ingredients in a crockpot.
  2. Cook in crockpot for 6-8 hours on low or until peas are so tender they dissolve.
  3. Stir soup to thicken with peas.
  4. Serve.
What are your comfort foods?
