{Split pea soup}
{Just put everything in a crockpot and let it go!}
{This is before I stirred it; the soup is thickened by the peas that dissolve}
One Year Ago: Strawberry-Rhubarb Crumble
Split Pea Soup
Makes 8 servings
1 pound split green peas, rinsed and discolored peas picked out
1 onion, diced
4 cloves garlic, minced
1 bay leaf
1/2 teaspoon ground black pepper
2 quarts broth (chicken or vegetable)
1/2 cup carrots, chopped
1/2 cup celery, chopped
1 tablespoon dried parsley
8 oz country ham (optional)
- Combine all ingredients in a crockpot.
- Cook in crockpot for 6-8 hours on low or until peas are so tender they dissolve.
- Stir soup to thicken with peas.
- Serve.
